9. Culinary Corner: Lemon Chicken Orzo: Heat 2 TBS olive oil in a large skillet. Salt and pepper 1 pound bite-sized chicken. Cook until lightly browned, about 5 minutes. Add 3 cloves minced garlic and 1 tsp dried oregano; Cook 30 seconds. Stir in 2 cups chicken broth and 1 cup orzo; Cover and simmer until tender, 8 to 10 minutes.
