It is said that a craftsman is only as good as his tools but sometimes you just can’t get away with the sub-par tools you have. It certainly is in my new flat, where I’m cursed with an electric hob that seems to have only two modes: too hot or not providing any heat at all.

With a hob that burns, I desperately need a pan that distributes heat evenly and doesn’t allow food to stick – even at high heat.
My cooktop must be on the highest setting to provide any heat, I’m actually going against the recommended use of Hexclad. Their official advice is to never use medium-low to medium heat and let the aluminum core of the pan lift heavily.
Even under these difficult conditions I have found this pan to be efficient at heating and resistant to food sticking. And even in conditions where the heat is a little too high, there is no permanent damage to the hived surface – everything is fine during hand washing.
My understanding is that the tri-ply layers of Hexclad are the thing to save my bacon when it comes to my garbage electric hob. Because of the pan’s construction, which includes stainless steel, aluminum and a non-stick (but PFA-free) coating, it’s able to distribute the heat over the entire surface rather than creating hot spots even though it’s blasting away.
Of course, having a pan with such premium construction comes at a hefty price. Also with Amazon Discounts applied, paying over £100 for a pan is a huge investment. But the old saying goes: buy nice or buy twice. Between this pan and my most favorite piece of cookware, Titanium pan of our locationI have found that sometimes you have to pay a little more for a product that you will use for years and years.
