Tuesday is for something healthy and delicious! I always look forward to salmon, and tonight we have easy lemon butter salmon—bright, flavorful, and perfect with a little lemon kick. On the side, we’ll have baked mushrooms in Parmesan cream sauce – rich and comforting – and oven roasted broccoli for that perfect crispy bite. It’s a meal I can’t wait to share!

We’re big soup fans around here, so tonight it’s sausage, white bean and swiss chard soup with a puff pastry lid – so comforting and special. On the side, we have my arugula salad with a bright lemon vinaigrette. And I’m making my butter-topped beer bread, in case Bobby wants some extra bread to eat the soup with.

Thursday looks like a little treat night! We have Ina Garten’s Shrimp Scampi – so easy and full of flavor. I’m pairing it with a classic caprese salad, because you can never go wrong with fresh mozzarella and tomatoes. And I’m pulling out some of my no-knead bread dough – it’s a lifesaver, ready to bake whenever I need it. It’s going to be a lovely meal!

It’s Friday, and that means we’re cozying up to our family favorite chili—this is the recipe I grew up on! I like to make a big batch and freeze some for later.
