Spring is really popping here! Spring is beautiful in Lancaster County. And our farmers market is reflecting that same spring vibe. This week’s menu features some of the delicious homegrown produce we find at our favorite farmers market. Here’s what’s on the menu for Easter weekend…
This is a great way to start the week! We are making Grilled flat iron steakAnd I’m already looking forward to it. I’ll have a delicious marinade, and Bobby will work the grill; He always does the best.

I’m planning on some extra steak because those leftovers will turn into delicious quesadillas later in the week, always a smart move!

After a big Easter meal, I always love to find a delicious way to use up leftover ham, and this is it! We are making it cozy Cheesy Ham Broccoli Casserole It’s creamy, hearty and perfect for a no-fuss dinner.
This is one of those meals that comes together in one pan, and if you have some day-old bread, you can easily turn it into layers for a slightly different twist.
To keep things fresh and light, I’m adding a simple one Caprese salad on the side. The combination of tomatoes, mozzarella and basil is such a nice contrast to the rich casserole.

It’s officially asparagus season, and I always look forward to this time of year. Even though we don’t have our own patch anymore, I like to grab a fresh bundle from the market; They just taste like spring.

I like to cook the fish until it’s almost done and let the carryover heat finish, keeping it all moist and flaky.

Two foods I remember from my school days are the amazing cheese enchiladas from my year at Del Rio Middle School (Texas) and CASH’s Chocolate Peanut Butter Bar (high school in Pa.)!
