The fourth week of May is my favorite time to cook. The farm stands and farmers markets in our county are absolutely overflowing with the season’s best produce right now, and I’m taking full advantage of every bit of it. Asparagus is everywhere, and the early strawberries are finally making their appearance, but it’s been a tough year for this sweet little fruit. I am so grateful for every pint I can get my hands on!
A few days ago I stopped at a local farm stand to pick up rhubarb for a galette, and I noticed a guy buying almost every stalk in the place. I was so curious that I just had to ask what he was planning to do with all this. The answer to that? rhubarb wine. I had no idea that was even a thing, but now I want to try it! It’s funny how a quick conversation at a farm stand can open up a whole new world.

Monday is my busiest work day, so dinner needs to be easy, delicious and light on the cleanup. A one-pan meal is almost perfect, and this creamy baked chicken and asparagus delivers on every front. Tender chicken and fresh asparagus come together in a rich, creamy sauce, all in one pan, which means dinner gets to the table quickly and the sink stays happy.

Bobby is a huge mushroom lover, and living about an hour from Kennett Square, the mushroom capital of the world, means we’re never far from the most beautiful, fresh portobello you’ve ever seen. The small town takes its mushrooms seriously, and if you ever get the chance to visit, the mushroom soup and bisque at the local restaurants are spot on.
This pepperoni pizza stuffed portobello mushrooms is right up Bobby’s alley, and when paired with a quick, creamy 15-minute creamy garlic pasta and a crisp chopped Italian salad with homemade Italian dressing, it’s the kind of weeknight dinner that goes down a treat.
We try to eat salmon at least once a week, and with so many delicious salmon recipes out there, we never get bored! This Seared Salmon with Lemon Garlic Cream immediately caught my eye, and I know it will become a new favorite. Salmon in a bath of creamy, garlicky lemon sauce sounds like pure heaven to me. Perfectly roasted asparagus and Moroccan lemon couscous make this a complete and satisfying meal with very little extra effort.
Saturday is perfect this week! We spend part of the day shopping for furniture, so starting dinner in the slow cooker before heading out is an absolute lifesaver. By the time we get home, the house smells incredible, and dinner is practically done.

Sunday is my favorite day of the week when my kids and grandkids are around the table! We’re big beef lovers in this family, grands included, and a beautiful Roast Beef Tenderloin with French Onion Au Jus is just the kind of show-stopping centerpiece that makes everyone feel a little celebratory. It might sound impressive, but a roast is honestly one of the easiest things you can make, especially with a good meat thermometer by your side. I add thinly sliced carrots to spread around while they roast. All those onions and beef drippings should be delicious.
Raw asparagus salad with walnuts and parmesan is absolutely incredible, and every time I serve it someone asks me for the recipe. Mashed Celery Root Mashed Potatoes round out this meal perfectly, and the best part is that everyone pitches in from table setting to cleanup. This is the dinner I live for.
I’ll be the first to tell you that I’m not much of a sweets person, but lately I’ve been craving a little treat with my afternoon coffee, and these Baked Chocolate Chip Cookies with Sea Salt are perfect for that. That sprinkling of sea salt on top totally takes them over the top!
