It’s been a big cooking week for us, full of family, company, overnight guests and Easter celebrations. Thank God, I will get a lot of help. I love the holidays when our house is full, a little busy and a lot of fun. It’s such a sweet change from the usual routine.

Let’s start the week with a simple and very satisfying pasta dish that seems perfect for the start of spring. This one-pan dinner features tender pasta, juicy spicy chicken, earthy mushrooms and crisp asparagus, all tossed in a garlicky, creamy sauce. And it comes together in about 30 minutes.
I pair it with Nani’s fried rice, a staple in our house, along with a tangy dressed salad. The week is off to a very tasty start.

I’m especially excited to try homemade pita bread again. I made it years ago and remember how delicious it was. I can’t wait to make it again and warm it out of the oven. It is worth the effort.

Company is coming, and you know I love it! I enjoy cooking and trying new recipes when we have family or friends over. My philosophy is simple: If a recipe doesn’t pan out, we can always order pizza.
But just by looking at this, I know it’s going to be a winner. This pork dish has a very simple elegance with its bold Dijon flavor, and is paired with a warm, down-home potato casserole. It’s the kind of food that feels a little special but is still very comforting.
Tonight’s dessert is both gorgeous and delicious. I’m a big fan of bundt cakes, especially when they get a little help from a box mix. I enjoy baking, but icing cakes is not my favorite thing, so a bundt cake is always a great choice. It’s simple, beautiful, and always turns out well.

Tonight’s dinner is another staple in our house, and I absolutely love this recipe. Our whole family does. This is a heritage dish my mom made for us when we were growing up. But this is not your mama’s salmon cake recipe. These are so easy and, I must say, even tastier than my childhood ones.
The air fryer makes all the difference. It makes the salmon cake crispy on the outside and soft and delicious on the inside. If you don’t have an air fryer, it’s definitely worth considering. I always use mine. If you don’t have one yet, you can pan-fry this cake.

It’s family pizza and movie night, one of our favorite traditions. We started this when our children were young and now they continue it with their families. Tonight, our son’s family is visiting us, and I couldn’t love him more.

Dinner today is very much a tradition at our house. My family likes what they like on the holidays, and Easter is no exception. I don’t make ham very often, and I really should. It truly is the gift that keeps on giving: a wonderful holiday meal, delicious leftovers and soup bones that later become the base of a hearty soup. I love the flavor of oranges with ham, so I’m trying a new glaze recipe. An Easter adventure.
