Dinner is easier when you have a plan, and this week’s On The Menu is filled with 45 delicious recipes to help you do just that.

I tried to create a menu that felt fresh and a little cozy at the same time. It’s a bit chilly here, so you’ll find a mix of comfort food alongside light, spring-inspired dishes. There really is something for everyone this week.

You’ll find simple dinners for busy nights, a few meals that feel a little more relaxed, and tons of sides and extras that you can mix and match throughout the week. Take a look and see what you will be making at home this week!

Air fryer salmon has become my favorite way to make this fish, and it comes out perfectly every time. The air fryer gives it a tender, flaky texture, and I always use a thermometer to make sure it reaches 145 degrees. It really makes all the difference. I use this Digital Food Thermometer.

This salmon is delicious with crispy air-fryer potatoes and easy sautéed asparagus, and a fresh arugula salad with lemon vinaigrette pulls everything together for a light, fresh, and very satisfying spring dinner.

I’m really looking forward to trying this Stovetop Spinach and Mushroom Lasagna. My family loves my traditional lasagna, but for busy weeknights it can be a bit time consuming, so this quick version is such a great option.

One of the things I love most about this recipe is how easily it can be adapted using what you have on hand. Paired with a crisp Italian chopped salad and warm, cheesy garlic bread, this dinner is warm, satisfying, and perfect for an easy night at home.

This creamy Tuscan chicken is one of those dinners that feels a little special but is still easy enough for a weeknight. My family loves this recipe, and it’s one that I bring back to enjoy again and again. The chicken is tender and full of flavor, topped with sun-dried tomatoes and spinach with a rich, creamy sauce.

It’s especially served over creamy Parmesan polenta, which soaks up all that wonderful sauce, and the roasted broccoli adds the perfect fresh, simple balance to the meal.

I grew up eating salmon cakes, and they have always been a favorite. I’ve made them with both fresh-baked salmon and canned salmon, and while fresh is wonderful, good quality canned red salmon also works beautifully.

This salmon cake is not my mama’s version. They were delicious, but this recipe adds extra flavor with onions, peppers, parsley, and a few other additions that really make them special. And I love that they are made in an air fryer, so they become crispy on the outside and tender on the inside. The recipe also explains how I make it in a skillet on my stovetop.

They pair so well with buttery rice and fresh green beans, creating an easy, satisfying dinner that’s packed with flavor.

Flat iron steak is one of my favorite cuts because it’s full of rich, meaty flavor and is so easy to cook, whether you grill it or cook it indoors. Bobby will put ours on the grill, and I always love the smoky flavor it adds. This is definitely a keeper recipe.

I love artichokes and am so excited to try this new recipe. Paired with baked potatoes, this dinner is hearty, satisfying, and easy at its best.

Bobby would love pasta tonight. This creamy Tuscan mushroom pasta is the kind of meal that feels warm and a little indulgent, but is still so easy to pull together. It is rich, full of flavor and perfect for a relaxing evening at home.

It pairs beautifully with a classic Caesar salad, adding a fresh, crisp contrast to the creamy pasta, making this a simple but very satisfying dinner.

Sunday dinner for me is all about family. I like the idea of getting everyone together after church and sitting down to eat a little earlier than usual; It just makes the day feel lighter and more special.

This menu is incredibly easy to make, but tastes like you’ve been in the kitchen all day. Rosemary-garlic pork tenderloin pairs well with sweet potato bake and roasted asparagus, and finishes with a brownie sundae with vanilla ice cream and warm fudge sauce.
