Butterflied Haunch of Muntjack with Onion Puree and Purple Sprout Broccoli


Muntjack venison is a wonderful wild meat and is available all year round, as deer are classified as vermin so there is no closed season. This onion puree is an excellent addition to various dishes. Purple sprouting broccoli can be substituted with any green in season.

Wine notes

Fontodi’s organically farmed 2022 Chianti Classico from Tuscany’s famous Conca d’Oro region offers dark cherry and damson fruit, with a touch of spice, leather and fine ripe tannins.
