If you can’t wait for corn season to make it, use good quality frozen corn. Just thaw the corn, drain the excess liquid on a paper towel, and make this wonderful summer salad.

I have to admit, this is the salad I make more than any other. Everyone loves it, and there is never anyone left! The secret is the homemade dressing. It’s creamy, tangy and full of that deep, delicious flavor you can’t get from a bottle. I like to double or triple the salad dressing recipe and freeze it in ice cube trays. Then pop the cubes into a freezer bag for later use. This dressing also makes a delicious marinade for chicken or fish.
Crisp romaine, golden homemade croutons, freshly shaved parmesan and that incredible dressing come together in minutes. It’s the kind of salad that steals the spotlight no matter what else is on the table! She is everyone’s favorite!


Watermelon and Feta Salad with Mint and Balsamic-Lime Drizzle is a fresh, sweet-and-salty side salad, perfect for a family dinner or get-together. This salad is the prettiest and tastiest spin on the traditional watermelon salad.
This salad can also be made by cutting watermelon into bite-sized pieces and crumbling feta. However, it does not have a beautiful effect or incredible appearance when plated.
