9. Culinary Corner: Easy Tomato Pie: Preheat your oven to 350°F. Halve 3 to 4 large tomatoes, squeeze out the juice, then finely chop them to make about 3 cups. Sprinkle with 1/2 teaspoon kosher salt and let it drain in a colander. Bake a store-bought 9-inch pie shell according to package directions, until lightly browned, about 8 to 10 minutes. Squeeze out any remaining moisture from the tomatoes with a paper towel. Spread 1/2 cup chopped onion on pre-baked crust, top with tomatoes, then top with 1/4 cup thinly sliced basil. Mix together 2 cups grated cheese, 1/2 cup mayonnaise, 1 tablespoon hot sauce, and a sprinkle of black pepper, and spread the mixture evenly over the tomatoes. Bake at 350°F until browned and bubbly, 25 to 45 minutes.
