These 7 easy summer desserts are fresh, fruity, and easy to make, perfect for warm weather entertaining, family dinners, and backyard gatherings all season long!

There is something wonderful about summer desserts. The fruit is ripe and bursting with flavor, the days are long and mild, and the last thing anyone wants to do is spend hours in a hot kitchen. That’s why I love simple desserts that are easy to make but taste like you put in more effort!
Fresh, in-season fruit is truly the secret ingredient in each of these recipes. When fruit is at its peak, even the simplest dessert tastes incredible. A handful of strawberries, a slice of cool watermelon, a handful of cherries from the farmer’s market…summer fruit makes everything taste better.
Last week I hosted a birthday lunch for a dear friend and served strawberry rhubarb galette with vanilla ice cream for dessert. Everyone loved it, and many guests made the sweetest comments about the crust! And just between you and me, that galette was one of the easiest things on the entire menu. It is the beauty of a great summer dessert. It may look and taste like a mess to you, but it’s actually quite simple.
These seven recipes are some of my favorites for warm-weather entertaining, backyard dinners, potlucks, and lazy summer afternoons when something sweet is present. From mini cherry pies in mason jars to gorgeous strawberry lemon pound cake, there’s something here for everyone and every occasion.
Let’s dig in!
Mini Cherry Pies in a Mason Jar

There is something absolutely charming about a dessert served in its own little jar! These mini cherry pies are personal, adorable and taste just like the real thing, with a buttery, flaky crust and a sweet, bubbly cherry filling. They’re perfect for a backyard party or Fourth of July celebration, and your guests will love having their own mini pies!
The star-shaped crust cutouts on top make these little pies look like they came straight from the bakery, but they’re surprisingly easy to put together.
This recipe is my oldest and favorite on Stonegable, and with America celebrating its 250th birthday this July 4th, it looks more perfect than ever! I’m planning to have the grandkids help me make these for our whole family gathering. There’s nothing better than little hands helping in the kitchen, especially when the results are this delicious!
🌿 Tip Box: Make this a day ahead and store in the refrigerator. Before serving, warm them slightly in the oven and top with a scoop of vanilla ice cream or a dollop of whipped cream. Your guests will think you’re confused all day!
Strawberry Lemon Pound Cake with Lemon Glaze

This is the kind of cake that disappears quickly! Strawberry Lemon Pound Cake is dense, moist and full of fresh strawberries and bright lemon flavor. The lemon glaze on top adds just the right amount of sweetness and tang, and makes the cake look great on a cake stand or dessert table. This cake looks even better the next day!
One of the things I love most about this cake is how incredibly versatile it is. I love making it when we have overnight guests or family staying with us. It’s perfect for breakfast served with a slice and coffee, and it’s just as delicious as dessert in the evening with a scoop of good vanilla ice cream. One cake, two occasions, and everyone is happy!
🌿 Tip Box: For best flavor and texture, use eggs and butter at room temperature before mixing your batter. It makes a real difference in how light and fluffy the finished cake turns out!
Bright Summer Rhubarb Galette

This is the dessert I served at my friend’s birthday lunch, and it was the star of the entire meal! A galette is basically a free-form pie, which means there’s no pie dish to mess with and it doesn’t require crimping. The rustic, unfinished edge is part of its charm, and the sweet strawberry rhubarb filling is absolutely gorgeous.
Serve it slightly warm with a generous scoop of vanilla ice cream, and I promise you’ll get rave reviews every time!
This is, hands down, my number-one A summer dessert, and everyone who tries it loves it! I change it up throughout the summer using whatever fruit is in season, so it never gets old. And here’s something that makes me smile every time: my nine-year-old self The grandson makes it all himself. If that doesn’t tell you how easy it is, nothing will!
🌿 Tip Box: Don’t worry about making your galette look perfect. The beauty of the galette is its relaxed, rustic look! Just fold the edges of the dough up and over the filling, and it will come out of the oven looking like it was made by a French pastry chef.
Easy summer cobbler from box mix
This is pure summer comfort in one baking dish! The easy strawberry cobbler starts with a box mix, which means it comes together in almost no time, but it’s full of flavor from scratch. The topping is golden and slightly crispy, and the strawberry filling underneath is sweet, creamy and absolutely delicious.
Serve it warm with a big scoop of vanilla ice cream and watch it disappear from the table in minutes!
This is a recipe I make all the time, and my family loves it as much as I do. With only four ingredients, it’s one of the easiest desserts in my repertoire. I make it all summer long, swapping out whatever fruit looks best at the farmer’s market or growing in the garden. It’s flexible and it’s good!
🌿 Tip Box: Fresh strawberries are wonderful here, but frozen strawberries work beautifully too. For best results thaw them first and drain off any excess liquid before adding them to your baking dish.
Glazed Lemon Zucchini Bread
If your garden is overflowing with zucchini this summer, this recipe is going to be your new best friend! Glazed Lemon Zucchini Bread is tender, moist and full of bright lemon flavor. The sweet glaze on top makes it feel a little more special than an everyday quick bread.
Don’t let the zucchini fool anyone. It practically melts into the batter, making the bread wonderfully moist without adding any vegetable flavor!
I’ve been making this recipe for decades, and it all started with a garden full of zucchini plants that needed to be used up! It’s the best problem in the kitchen if you ask me. The zucchini batter works its quiet magic, making this bread wonderfully moist that nothing else can replicate. Once you make it, you’ll understand why it’s been in my recipe rotation for so long!
🌿 Tip Box: Shred your zucchini and then squeeze out as much moisture as possible using a clean kitchen towel before adding it to the batter. This simple step prevents your bread from getting too soggy or dense.
Healthy Strawberry Shortcake
Yes, you can eat strawberry shortcake for breakfast, and this recipe makes it completely guilt-free! Healthy Breakfast Strawberry Shortcake is made with light, fresh and wholesome ingredients, making it perfect for a special summer morning or weekend brunch.
It’s one of those recipes that sounds indulgent but is actually good for you, and that’s always a win in my book!
Our family has been enjoying this healthy-ish shortcake for breakfast since my kids were little, and it’s still a favorite today! Instead of serving it with whipped cream, we pour cold milk over the top, which is absolutely amazing. The shortcake itself is cake-like and a touch sweet, like a biscuit, which makes it feel like a real treat on the breakfast table. And here’s a little bonus: it’s just as delicious served as dessert. One recipe, two occasions, and everyone is happy!
🌿 Tip Box: Toss your strawberries with a little honey or maple syrup and let them sit for about 15 minutes before serving. They will become beautifully juicy and syrupy, making every bite taste incredible.
