9. Culinary Corner: Rhubarb Crisp: Preheat oven to 350°F. Butter a 13×9-inch baking dish. In a bowl, whisk together 6 cups diced rhubarb, 3/4 cup sugar, 2 teaspoons flour, and 1 teaspoon vanilla. Spread in dish. In another bowl, whisk together 1/2 cup flour, 1 1/2 cups rolled oats, 1 cup packed brown sugar, 1/2 cup cubed unsalted butter, 1 1/2 teaspoons cinnamon, and 1/4 teaspoon salt until crumbly. Sprinkle over the rhubarb. Bake for 40 minutes until browned and bubbling. Cool 10 minutes before serving.
