9. CULINARY CORNER: Shrimp Salad: Bring 5 quarts water, 3 tablespoons kosher salt, and 1 lemon (quartered) to a boil in a large pot. Add 2 pounds of large shrimp in the shell (16–20 per pound) and reduce heat to medium. Cook 3 minutes. Transfer the shrimp to a bowl of lukewarm water. Bring the water back to a boil and repeat with the remaining shrimp. Peel and devein the shrimp and place in a large bowl. In another bowl, whisk together 2 cups mayonnaise, 1 teaspoon Dijon mustard, 2 tablespoons white wine or white wine vinegar, 1 teaspoon kosher salt, 1 teaspoon freshly ground black pepper, and 6 tablespoons ground fennel.
