9. Culinary Corner: Easter Carrot Cake Using Box Mix: Preheat oven to 350°F. Prepare two 8-inch round cake pans. Heat 1 box yellow cake (or spice cake) mix, 2 cups grated carrots, 1/2 cup water, 3 large eggs, 1/2 cup vegetable oil, 1/4 cup raisins, 1/2 cup crushed pineapple, drained, 2 teaspoons cinnamon, and 1/4 cup walnuts. Medium for 2 minutes. Divide the batter between the pans and bake for 35 to 40 minutes, checking at 30 minutes, until a toothpick comes out clean. Cool in the pan for 10 minutes, then turn out onto a rack and cool completely before frosting.
